Abstract
茶叶中的化学成分约有700多种,其中有机化合物在450种以上.多酚类是茶叶中的最重要化学成分和活性成分,茶多酚中儿茶素占60%～80%.多酚类物质尤其是其中的儿茶素的抗氧化作用、清除自由基的作用已受到国内外学者的广泛关注,并对其作用效果和形成机理进行了广泛的研究.
