Abstract
目的:建立口蘑中磷脂的测定方法.方法:氯仿提取总磷脂,经消化后采用钼酸铵比色法测定总磷脂含量.结果:口蘑中总磷脂的含量:黑口蘑为9.805%;白口磨为12.637%;杨树口蘑为10.435%.结论:该方法操作简单,结果准确,口蘑中尤其是白口磨中磷脂含量较高,值得开发.
