Determination of the influence of homogenizing conditions on the stability of buffalo milk by particle size analysis.

Particle size distribution between buffalo milk and Holstein milk, influence of homogenizing conditions on the particle size distribution of buffalo milk were analyzed by particle size analysis in the paper.The results show that particle size of buffalo milk was bigger than that of Holstein milk.The buffalo milk had a better stability when it was homogenized at 65℃、24 MPa.The particle size analysis was a rapid and accurate method to determine the stability of milk.
