Abstract
Objective To investigate the fructo-oligosaccharides (FOS) content in Bifidobacterium-fermented mixed fruit and vegetable juice by high performance liquid chromatography.Method A ZORBAX NH2 analytical column was used with acetonitrile-water solution (75:25,v/v) as the mobile phase at a flowrate of 1.0 ml/min,and a refractive index detector(RID)was used for the detection of the sugars.Result Under the above conditions, the main sugars in Bifidobacterium-fermented mixed fruit and vegetable juice had been effectively separated. The method had good recovery and precision (RSD). Conclusion The two Bifidobacterium-fermented mixed fruit and vegetable juices are rich in FOS,especially 1-Kestose(GF2).
