以螺蛳的腹足肌部分为研究对象,比较了几种酶对螺蛳蛋白的作用效果,选择了一种新型酶Proleather FG-F。以水解度和蛋白质得率为指标采用响应面分析法对酶解工艺进行了优化,对酶解产物的相对分子质量分布范围、游离氨基酸含量及ACE酶抑制活性等进行了分析和比较。
