Antagonistic effect of the glycopeptide from zein on acute alcohol-induced liver injury in mice

•Zein peptide was modified by enzymatic glycosylation reaction, microbial transglutaminase was applied as a biocatalyst and D-glucosamine as an acyl acceptor.•Preintervention of zein glycopeptides (GZP) alleviated acute alcohol-induced liver injury in mice.•GZP exhibited hepatoprotective effect by regulating genes related to inflammation, lipid metabolism and oxidative stress.
