萝卜红色素的提取工艺及其稳定性

Abstract
以心里美萝卜为材料,对萝卜红色素提取工艺及其稳定性进行了研究。结果表明:在提取时间为3 h、料液比1∶20[质量(g)体积(m l)比]、温度70℃的提取条件下,萝卜红色素提取的产量最高;在大孔树脂AB-8,NKA-9,S-8和NKA-II纯化萝卜红色素时,以AB-8树脂吸附能力最强,吸附速率最快。萝卜红色素热降解遵循一级反应动力学规律,25℃下半衰期为73 d;室内光线照射5 h后萝卜红色素的残存率比室外放置的高54.13个百分点;萝卜红色素明度指数随溶液pH上升而降低,颜色偏离红色而接近蓝绿色。
