1. 特征品质保持与调控:研究熏烧炸烤、风干、酱卤等传统肉制品绿色加工与安全防控理论,攻克加工过程特征品质提升、营养组分增益与加工危害因子消减协同技术,研发即食、即餐、即配、即热的4R肉制品,实现产业化。
2. 传统肉制品绿色智能制造:重点开展传统熏烧炸烤、风干等加工过程及新型加工因子作用下的传质传热模式,解析其对肉品质及营养的作用,研发固态射频、光波、过热蒸汽、红外等新型热加工技术,创新和集成组装配套的加工装备,实现传统肉制品清洁、绿色、标准、智能加工。
