Academic record: Bachelor´s degree in Human Nutrition and Dietetics, Bachelor´s degree in Food Science and Technology, Master´s degree in Agricultural Chemistry and Novel Foods and PhD in Biology and Food Science (International Doctor Mention).
The line of research followed is based on the study and development of green processes for the extraction and fractionation of bioactive compounds from natural sources, such as plants, seeds, vegetables and by-products from the food industry and the subsequent physico-chemical characterization, with the aim of producing foods for specified health use and nutraceuticals. The extraction processes are based in the use of green solvents (such as water, ethanol, ethyl lactate and limonene) and novel and efficient extraction and fractionation technologies (SFE, SAS, PLE, SWE, UAE, MAE, EAE), following the principles of Green Chemistry. The characterization of the extracts and fractions obtained are mainly carried out by means of advance analytical techniques, such as HPLC-DAD, HPLCMS, GC-MS, SFC, SEM and laser diffraction.
