Her research areas include carbohydrate chemistry and technology (modified starches, microencapsulation of sensitive food components using conventional and newer wall materials, enzyme-polysaccharide interactions, biofuels from agro-industrial waste and many others), fermentative production and downstream processing of biomolecules, chemistry and technology of traditional Indian foods, food quality assurance, supercritical carbon dioxide extraction of sensitive compounds of significance to food industry.
