Dr. Pedro Henrique Santos is graduated in Food Engineering from Universidade do Estado de Santa Catarina (UDESC, Pinhalzinho, SC, Brazil), in 2010.
He received his Masters degree in Food Engineering at Universidade Federal de Santa Catarina (UFSC, Florianópolis, SC, Brazil), in 2013, working with the rheological properties of jambo-vermelho and cupuaçu juices, two species of native fruits commonly found and widely consumed by the inhabitants of northern Brazil (amazon region), and his PhD in Food Engineering at UFSC (2018), working with high pressure technology applied to obtain bioactive compounds from residues (peel and leaf) of feijoa, a brazilian native fruit.
Dr. Santos also has a postdoc in Food engineering at UFSC (2019-2022) where he contributed to multidisciplinary projects by using non-conventional extraction techniques to obtain bioactive compounds from plant matrices. He also developed research projects, provided a short-term training related to the use of high-pressure extraction techniques, supervised a master and a PhD student, and created two Standard Operating Procedures (SOP) for the use of equipment and devices.
Dr. Santos is currently working as a postdoctoral researcher at Federal University of ABC (UFABC). His research lines include:
- Oil-in-water Pickering emulsions;
- Essential oils;
- Antioxidant, antibacterial and antiviral analysis;
- Phenolic compounds.
