个人简介
I received my Ph.D. in Food Science from the University of Guelph in 1997. I joined Kasetsart University in 2003 and is currently an associate professor at Kasetsart University. I teach colloidal systems in foods, food materials sciences and food protein chemistry for graduate courses.
My current researches are on assembling-dissembling-reassembling process of food matrices during processing, storage, ingestion and digestion; and cellular uptake of nutrients and bioactive compounds in human cell models after digestion: use of plant peptidoglycans in enhancing oral processing, bolus lubricity, digestion & absorption, surface phenomena of sub-micron particle under physiological conditions to enhance passive diffusion efficiency through muco-adhesive layer.
I am working on bioactives from rice and rice bran, particularly on phytosterols, oryzanols, tocols, policosanols extracted from rice bran oil refining process: process optimization during extraction and concentration using physical means; their uses as structuring ingredients in rice bran oil oleogel and fabrication of thermo-stable water-soluble vesicles containing oil-soluble rice phytochemicals.
Novel functional proteins from co-products obtained from dairy processing, starch processing, soymilk processing and virgin coconut oil processing are of my interests: hypoallergenic protein hydrolysate powder, anti-glycation protein hydrolysate powder, peptide-based carriers for oral delivery of bioactive terpenoid compounds.
