Bio
My current research interests are focused on new processes with technological interest for improving food preservation. We pretend to extend the shelf-life of food products and improve their quality from a microbiological, organoleptic and nutritional point of view. Particularly, the main interests are the characterization of emerging freezing technologies (high-pressure and electromagnetic freezing) and the identification of the new opportunities that high pressure technology opens for food preservation (high-pressure processing under no conventional conditions, including subzero and high temperatures; hyperbaric storage; high-pressure freeze concentration).
