个人简介
My research focuses on enhancing the nutritional profile of beef to favor human health. More specifically, I analyze fatty acids and phytochemicals in beef and forage samples. During my Ph.D., I focused on the effects of supplemental feeds on the nutritional profile of grass-finished beef. I also explored the impact of supplementing cattle diets with by-products from the wine industry (grape-seed extracts) on the fatty acid and phenolic profiles of beef.
In the future I would like to investigate the effects of beef consumption from different production systems (regenerative, grass-fed, feedlot, etc) on human health (e.g. inflammatory markers, biomarkers of metabolic health, etc) by conduction randomized controlled trial.
