Bio
西成胜好(Katsuyoshi Nishinari),入选国际食品科学院院士(IAFoST),目前担任日本食品科学工学会会长、《Food Hydrocolloids》副主编。从事食品物理、食品加工和食品健康研究,共发表300余篇原创性论文、100多篇评论性文章,编写著作10余部。曾任日本流变学会会长、日本大学设置委员会委员、日本咀嚼学会和魔芋学会副会长。担任法国ESPCI、英国威尔士大学、上海交通大学客座教授,《Biorheology》、《Journal of Texture Studies》、《Bioscience, Biotechnology and Biochemistry》等杂志编委。获日本食品科学工学会终身成就奖、日本流变学会杰出贡献奖、日本生物流变学会Oka Shoten奖、中国食品科技学会国际交流奖、国际食品胶体学会Food Hydrocolloids Trust Medal等学术奖励。
