RESEARCH INTERESTS
My research is to develop an interdisciplinary research program at the interface of food processing, numerical simulation, material science, nanotechnology, food microbiology, molecular biology, and high-speed photography to address critical questions in Agriculture and Food Systems. Growing challenges to assuring the security of agriculture and food systems, producing profitable healthy foods, reducing food waste, and saving energy, alongside advances in material science have created new opportunities to better understand how we can develop state-of-the-art solutions to complex problems at the food/energy/water/climate nexus. The research program in my laboratory is conducting studies related to Food Process Innovation and Advanced Materials, as a means to develop an INTEGRATED BIO-BASED APPROACH for improving the safety, quality, and sustainability of agriculture and food systems.
