Bio
长期从事传统主食与菜肴加工技术与装备研究。主持和参与国家级科技计划8项,获得省部级科技进步奖3项,发表论文120余篇,参编著作2部,专利30余项。建立了主食与菜肴加工中物理的、化学的和生物学方法相结合的综合减菌化技术、传统工艺的工业化适应性改造技术、软包装食品的高阻隔包装技术、低频电场低温保鲜及解冻技术和温和式热杀菌技术。开发成功了双峰变温热水喷淋杀菌机和过热蒸汽自动烹饪机等国际先进的加工装备,畜禽酱卤自动化加工生产线等。研制出3,000余种适合于工业化生产的技术工艺与配方。研究成果已广泛应用于传统主食和菜肴食品等工业化生产领域,在日本、中国等50多个项目中实现了成果转化。
