Bio
Our research is focus on antioxidant and development of functional foods. It is very important to our group to elucidate the possible interactions between bioactive compounds and fiber and how the bioaccesibility and bioaviability is affected during the digestion processes. The biochemical and physicochemical interactions that occur between these molecules are being studied. Nutrigenomic and metabolomic studies of phenolic compounds give good information necessary to elucidate some mechanisms.
