个人简介
I have completed a PhD in Agricultural Science focused on the importance of indigenous fruits' bioactive compounds (phytochemicals) and their link to human health. My project also involved the use of natural biopolymers to encapsulate bioactive compounds from indigenous fruits and facilitate targeted release during gastrointestinal digestion. I also have a master’s degree in food science and technology and a BSc Honours in Food Science and nutrition. My studies and previous job experiences have equipped me with knowledge and skills in human nutrition, food chemistry, food microbiological testing, new product development and downstream processing, and chemical analysis of samples and raw materials. I am a qualified nutritionist and my main nutrition interests are more on infant to young child feeding, diet and diabetes, diet and pregnancy and non-communicable diseases. My master’s project was directed at developing a gluten-free flour using an underutilised tuber and legume, thereafter, incorporating natural hydrocolloids and enzymes in the gluten-free dough, with the main objective being to develop gluten-free bread with characteristics like wheat bread.
My academic curriculum provided me with a solid knowledge of the different theoretical subjects implied in Food safety and food microbiology. My studies were characterized by significant heterogeneity, but far from being a defect, I consider it my best quality. Finally, even if I could not say to be an expert in food safety and food microbiology now, my master’s and PhD stage experience proved my strong motivation and tenacity, which allowed me to acquire autonomously new working skills, and the will to learn even more.
Through my studies, I learned how to use write and promote articles. The importance of food safety, production, processing, preservation, and storage reinforced my interest in research and development. I have good interpersonal skills, a solution-oriented mindset and effective communication skills, an affinity for details, structured and consistent way of working. I would like to believe that l have good engagement and creativity, and effective networking skills. I can follow routine procedures and validation applicable to manufacturing, my academic training has also equipped me with the necessary technical and operating skills (HPLC and Spectrometry). My strengths lie in troubleshooting and a hands-on approach to problem-solving.
