He is a well-known expert in this area with significant contributions particularly in the development of purple wheat products, hairless canary seed as a novel food, barley as a low glycemic food and high-lutein wheat and corn food ingredients. Dr. Abdelaal's ~125 peer-reviewed publications and 110 scientific presentations encompass a wide array of research areas including bioactive compounds, antioxidants, anthocyanins, carotenoids, phenolic acids, starch functions, protein structure and function, food nutrition, crop fractionation, etc. He is the Editor of the bestselling book “Specialty Grains for Food and Feed” published by the Cereals & Grains Association (formerly the American Association of Cereal Chemists (AACC) International) in 2005. Dr. Abdelaal was the recipient of the AACC International Fellow Award in 2017 and the recipient of the AAFC Gold Harvest Award in 2013.
