Bio
CARMEN SÁENZ, born in Santiago, Chile (1950), is Doctor in Pharmacy (Field: Food Science & Technology, University of Madrid, Spain, 1979), full Professor at the University of Chile (2002) and member of the Chilean Academy of Pharmacy (2014). Since 1979 she teaches in the Faculty of Agricultural Sciences (undergraduate and postgraduate programs). She was Director of the Doctorate Program on Nutrition and Foods (University of Chile, 2006-2008), Director of the Graduate School (2001-2003) and head of the Dept. Agroindustry and Oenology (1981-1986; 2010-2012) of her Faculty. She belongs to the Academic Evaluation Commission of the University of Chile.
Coordinator of the Agroindustries & Post-harvest Working group of FAO-ICARDA CactusNet (1996-2017) she is now the General Coordinator of the FAO-ICARDA CactusNet (http://www.cactusnetwork.org/).
At the Ibero-American level she was the lead of the Agri-food group of the CYTED Program (Science and Technology for Development) (2017-2022) and now she is consultant (www.cyted.org).
Her research activities are related to the processing and uses of fruits and vegetables, mainly of arid zones (cactus pear, pomegranate, aloe vera, fig, among others).
She has been guest speaker at many congresses and seminars (France, Mexico, Spain, Tunisia, Egypt, Israel, Peru, Morocco, Argentina, South Africa, Brazil and Chile).
She has published more than 90 articles in indexed and outreach journals, including a book for FAO with other authors, and several book chapters. She has also participated as a teacher in several workshops and extension courses for small farmers.
