Bio
I am interested in how human dimensions (e.g. consumer preferences, culture, economics) drive animal production and its effect on our relationship with the greater ecological system. I employ multi-disciplinary methods from consumer and sensory science, animal and meat sciences, participatory research, and Indigenous studies to inform and advance resilient food systems. My research includes: insects and algae as feed, sustainability of bison, consumer preferences for unfamiliar animal products.
