Blanca Escudero López was awarded a FPI pre-doctoral fellowship in the Department of Molecular Biology and Biochemistry Engineering (UPO) in 2010 as part of a Junta de Andalucia-funded research project (P09-AGR-4814M). Her PhD was focused on the bioactive compound characterization of a novel orange-derived drink obtained by controlled alcoholic fermentation and the evaluation of its bioactivity in the improvement of cardiometabolic parameters through the modulation of oxidative stress, lipid profile, and inflammatory response in healthy mice. During this time, she had the opportunity to participate in a 5-month research stay with Prof. D. Del Rio (Laboratory of Phytochemicals in Physiology, Human Nutrition Unit, University of Parma), where she learned how to assess the bioavailability of phenolic compounds in rat biological fluids. She also collaborated with other external organizations (Prof. D. Hornero Méndez, Instituto de la Grasa-CSIC) to successfully fulfill the goals. She received the UPO Extraordinary Doctorate Award in 2014 after defending her PhD with international recognition (cum laude unanimously). She was then awarded a postdoctoral fellowship Department of Molecular Biology and Biochemical Engineering) to investigate how phytochemicals and their metabolites produced by regular consumption of fermented orange juice can protect or ameliorate the main biological processes involved in the development of metabolic disease (intervention studies with mice and humans). She also investigated the bioavailability of orange flavanones and carotenoids found in plant-derived beverages in subjects after acute intake. She was promoted to Full Assistant Professor (Department of Molecular Biology and Biochemistry Engineering, UPO) in 2020, and Full Professor in 2023. She joined the Research Group "Nutrición y Diabetes" (PAI Group BIO-311 from the Junta de Andalucía). She has been a member of the Andalusian Center of Molecular Biology and Regenerative Medicine (CABIMER) as an investigator since 2021, where she works in the "Nutrition and Metabolic diseases" research group (IP F. Martín Bermudo). She's also a member of the CIBER of Diabetes and Metabolic Diseases (CIBERDEM). Since then, recent research has been on determining the role and influence of nutrients and diets on gene expression, as well as the association between gene expression and the development of specific chronic diseases (type 2 diabetes, non-alcoholic fatty liver disease and cardiovascular diseases). Finally, she funded with competitive funding schemes including two undergraduate fellowship, one PhD fellowship, one research stay fellowship, one postdoctoral fellowship, two Temporary Researcher contracts, and a Full Professor position. She was an active participant in five research projects, each of which resulted in a significant transfer of knowledge to the industry. Her h-index is 10 based on 337 citations, and she is author of 22 scientific papers (20 JCR and 2 Scimago indexed, 11 Q1, 8 Q2; 11 first author, 4 second author), 1 international book chapter in the field of food science and nutrition, and 27 communications to scientific congresses. She has over 1000 hours of experience teaching at Human Nutrition and Dietetics Degree (Experimental Sciences School, UPO) and Master´s Degree of Science and Technology of Oils and Fermented Beverages (UPO) in a variety of disciplines including Bromatology and Functional Foods. Member of the Academic Commission for the Master's Degree in Science and Technology of Fermented Oils and Beverages (UPO). Member of the Internal Quality Assurance Commission of the Faculty of Experimental Sciences (UPO).
