Bio
Prof. Kayastha’s work has led to a better understanding of the mechanism of action of several significant enzymes from plants and their physiological and biochemical roles. Beyond his explicit contributions in enzymology, he has successfully immobilized industrially important plant enzymes onto novel nanomaterials. Immobilized plant β-galactosidase (BGal) was used for the preparation of ‘lactose-free’ milk and biosensing of ‘hidden lactose’ present in a variety of food products for lactose intolerants. GOS, a prebiotic was synthesized, using lentil BGal, which showed trans-galactosylation activity, yielding trisaccharides. Immobilized BGal also showed robust stability, reusability, and bioconversion of lactose in whey, discarded as waste in cheese manufacturing, increasing the BOD & COD. Similarly, he has developed nanomaterial-based biosensors for glucose, urea, lactose, glutamate, and a neurotoxin quinolinic acid.
